These cute carrot, sweet potato and zucchini fries can be a good snack for kids. But adults won't be able to stop nibbling either. :) Apart from that, these can also be used as a side dish instead of classic potato fries.
Allergens: gluten | Preparation time: 40 min | Portions: 3 | Complexity: easy
Ingredients
2 sweet potatoes
2 carrots
1 zucchini
3 tbsp olive oil
1 tsp salt
pinch of pepper
1/2 tsp red ground paprika
1/2 tsp garlic powder
2 tbsp whole wheat flour
2 tbsp breadcrumbs
100 ml plant milk
Preparation
Preheat oven to 200C, or prepare the air fryer if you have one.
Wash, peel and cut the vegetables into sticks. Place in a bowl and add salt, pepper, paprika, garlic powder and olive oil. Mix well.
Spread the sweet potato and carrot sticks on a baking sheet lined with baking paper or in the air fryer basket (if using the air fryer it will probably be necessary to bake in several rounds). Bake for 20 minutes in the oven or 15 minutes in the air fryer.
Prepare 2 bowls. Mix flour, plant milk and a pinch of salt in one, and put breadcrumbs in the other.
Drain the zucchini from the water that appeared, then dip each stick in the first bowl and roll into breadcrumbs in the second bowl. Arrange the breaded sticks on a baking sheet lined with baking paper or on a tray if using an air fryer.
When the sweet potato and carrot are done, put the zucchini to bake. If using the oven, bake for 15 minutes, and if using the air fryer, bake for 12 minutes.
Serve with favorite sauces.
Notes
For gluten-free options, replace whole wheat flour with gluten-free flour, and instead of breadcrumbs, you can use a mixture of seeds, crushed cornflakes or gluten-free breadcrumbs.
